Crab meat cake, served at room temperature I guess. It is light and appetizing.
Fremantle octopus with house cured bacon and baked potato
I love it! There’s an egg yolk, octopus, potato and bacon underneath. The dish is served warm. I think the texture of the octopus is just right and not chewy.
Pink snapper with mussels, witlof and lime
Pan-fried snapper on top of witlof and mussels. The witlof is cooked with lime juice, it is a bit sour yet refreshing. The mussels are nicely cooked.
Dry aged Jack’s Creek sirloin with sautéed mushrooms and watercress
Sorry for the bad photo. The beef comes in big portion. Since it is a dry aged steak, the texture is interesting. The sautéed mushrooms are quite salty though.
Blood orange soufflé with caramelised miche and marmalade ice cream
Very rich blood orange flavour. The marmalade ice cream melts in the middle of the soufflé. The soufflé by itself is very sweet but it is nice to pair it with the ice cream.
Valrhona chocolate with Beurre Bosc pear and roasted cocoa sorbert
I remember watching a kid rolling that chocolate dessert in a MasterChef Junior episode haha. I think the cocoa sorbet is made with dark chocolate. I have never had chocolate sorbet before, it is quite nice.
