We had the Chef’s menu, I would say it is one of my favourite degustation menus. Asian infused flavours, for those who like a twist in a seafood menu.

Snacks
I love the poached quail egg.

Cloudy bay clams
Thai-flavoured coconut broth, with carad prawn, vermicelli, and spring onion, yum.

Seared tuna
Very sweet and thick black pepper caramel, together with grapefruit and crisp pork.

Moreton Bay bugs
Fresh bugs with brown butter emulsion, brussel sprouts leaves and aged balsamic.

Seared scallops
Scampi, seared scallops with sauce vierge and lemon thyme veloute.

New Zealand john dory
Japanese touch, soft and smooth fish flesh with miso butter, edamame, radish and seaweed.

Dutton Park duck breast
Not as impressive as other seafood dishes. Duck breast paired with spiced pear and apple chutney, cavolo nero and parsnip.

Cheese and Brioche toasted sandwich
Should have taken a photo of the toast inside, haha. Melted Brie cheese with truffle. If you are fond of Brie cheese and truffle, I guess you will enjoy the toast.

Valrhona white chocolate marquise
I like the marquise. The sour cherries taste like the Chinese salty dried plum ‘hua mei’.

Lemon aspen curd 
With sesame crunch, honey, yoghurt and basil.
